Schneider's first class Eiswein has concentrated flavours of honey and peach. Though its yeast content is low, it is a very sweet, intense and concentrated ice wine. The grapes for this wine come from one of the oldest vineyards on the Schneider estate, which has a steep south-facing slope made of grey slate and volcanic rock. This vineyard is where the Schneider family harvests their premium dry wines, as well as their excellent sweet wines. Grapes are pressed and fermented in stainless steel vats, and the sweet grape juice only contains 60% natural yeast. After fermentation, the wine was bottled in April 2013. This wine is a 75cl, unisex offering with an alcohol content of 7.0% vol. and a residual sugar level of 321 g/l, with an acidity level of 13.0 g/l.
