This is a very rare bundle of 3 Cooper King Whiskies. Transatlantic Heritage floor-malted grains are mashed by hand before an extended 6-7 day fermentation and double distillation in a 900 litre copper pot still. The spirit is then matured in a mix of ex-Bordeaux wine casks and ex-Bourbon casks. Nose: fruit compote, vanilla and toasted oak.Palate: rich malt, cocoa, parkin and butterscotch.Finish: long and complex with vanilla and cinnamon. Adding water releases hints of marzipan and toast on the nose, followed by generous helpings of baked apple, dried hay and a luxurious, vanilla pastry sweetness on the palate. The finish is elegant, with a tingling of rye spice on the tongue, enticing you back for more. - Abbie Jaume, Head Distiller Nose: Vanilla custard, cola cubes, baked apple and marzipanPalate: Ginger biscuits, dried fig, rye spice and toasted oakFinish: Medium-long with stewed fruit and ginger cake Sundown Sundown is a celebration of American oak. Matured predominantly in first-fill bourbon casks, it opens with inviting aromas of biscuity banoffee pie and toasted nuts. On the palate, chewy vanilla and mint chocolate are carried on a backbone of malt and toasted oak - thanks in part to the small 100 litre casks used for maturation. The finish is sublime, with dried fruit and lingering, warming spice. - Abbie Jaume, Head Distiller Nose: banoffee pie, biscuit, ripe pear and hazelnutPalate: baking spices, mint chocolate, malt and crème caramelFinish: medium-long with raisin, tobacco and warming spice
