The result of a friendship between Vincent Pastorello and Pepe Raventós, the visionary behind some of Catalonia’s most celebrated sparkling wines. Here though, the focus shifts to a still expression of the region’s native Xarel·lo. From a prized, notably cool parcel of 55-year-old vines rooted in pure limestone, the wine is certified biodynamic and brims with character: beautifully textured, vibrant with energy, and laced with a striking saline edge.
