Nusbaumer in Steige, Alsace, this classic Vieille Prune is distilled from wild blue plums—small, round, green-fleshed fruit prized for intensity. After a long, natural fermentation, the plums are de-stoned and the pulp rests 4–6 weeks to deepen aroma. Double-distilled, reduced with pure Steige spring water, then aged one year in oak, it emerges with a gentle amber hue and signature roundness.. TASTING NOTES. Nose: very fruity with a delicate almond (noyau) lift.. Palate: soft and rounded, classic ripe-plum character framed by subtle woody spice from cask ageing.. Finish: long and mellow for a stone-fruit eau-de-vie, the oak ageing adding length and polish.. HOW TO ENJOY. Serve neat as a digestif (lightly chilled or cellar-cool). Also beautiful over vanilla ice cream, with a dark-chocolate square, or to perfume pâtisserie.. CARE. Store upright, cool and away from light.
