KAIHA is a type of Hanazake, an awamori unique to the island of Yonaguni. Traditionally used for funeral rites, this type of awamori has been a very important part of the Yonaguni people and culture for centuries. With a relatively mild flavor and soft on the palate, this is a great drink for beginners. Please note that the cloudiness is due to the umami compounds suspended in the liquid and is intentional, it is not an indication of quality. It has slightly sweet and savory notes of cooked rice, distinct flavors of sesame. It pairs well with gyoza and other dumplings, stir-fry. It can be served on the rocks or with water, and can also be put in the freezer just before serving. Store it upright in a cool and dry location. Made from rice, water, koji, and yeast, this awamori is produced by Sakimoto Shuzo in Okinawa prefecture.
