Hiraizumi Hiten Shirogane is an elegantly clean refined sake, 100% made in Akita. The rice was grown locally by the brewers themselves, who also created the original yeast (BL531). The taste is pure and has a refreshing body, while the aroma is quite subtle, making it an easy sake to pair with any dish. The yamahai method is a traditional way of producing the fermentation starter using ambient lactic acid bacilli. This sake has a cleansing high acidity with a balanced fruity profile of pears and spices. It has a full-body with a long and subtle dry finish which gives great structure to the taste. It pairs well with chicken nanban, deep fried white bait and scampi, and arancini. Serve chilled (8-12°C) or at room temperature. Store in a dry and cool place, avoiding direct sunlight.
