1 x 75cl. The producer, Domaine William Fevre, was founded by William Fevre in 1959. It is one of Chablis' most substantial domaines, with nearly 78 hectares of vineyards across the different ranks and parts of the Chablis area. The domaine has 12 hectares of Premier Cru vineyards and an impressive 16 hectares of Grand Cru vineyards, making it the biggest owner of Grand Cru land in Chablis. After being sold to Joseph Henriot in 1998, the domaine converted its Grand Cru vineyards to biodynamic farming and reduced general oak use to emphasize purity and fruit precision in the wines. The Premier Cru wines are generally vinified in 40-50% oak, while the Grand Crus are vinified in 70-80% oak, with no new oak used for either. The average age of the wood in the cellar is five years old. Along with Raveneau and Dauvissat, Domaine William Fevre is one of the best producers in the area, with an exemplary range of Chablis and the Grand Cru Les Clos, produced from vines averaging over 40 years old. This wine is a white wine, suitable for both men and women.
