The grapes come from Bischel's top vineyard, the Binger Scharlachberg, which has very warm, steep slopes with quartzite and slate soil. The wine is made using a late harvest, where the grapes are picked by hand according to ripeness, and then gently crushed and left to stand in their own juice for a few hours before gentle pressing.
